Lemon Cheescake
Here’s the recipe 💛
Everything is made from scratch, for a no bake easy lemon cheesecake that tastes amazing! I love citrus things and this was creamy, sweet and so good!
Ingredients for the base:
100g of blended oats ( blitz)
100g Almond flour ( ground almonds)
75g melted unsalted grass fed butter
1tsp Vanilla extract
2 tbsp of raw honey
combine all ingredients and press into a round tin or baking dish. Put into the fridge to set whilst you make the rest.
Topping:
A whole tub ( about 250g) of organic Italian Mascarpone cream cheese ( Waitrose do a own brand one).
About half tub of organic double cream ( I love Yeo valley).
The juice of 3 fresh lemons
1 tbsp raw honey
1tsp Vanilla extract
—whisk with an electric hand whisk until you can peak the mixture. Then Spread this over the entire base layer and leave the cheesecake in the fridge for up to 6 hours to set.
Add lemon zest and lemon slices to decorate!
