Jobes Chocolate cherry heaven muffins…gluten free style

I love organic chocolate…Which I do indulge in when I fancy it… Guilt free!
A little bit if what you fancy is always good to add to a balanced healthy lifestyle. My ultimate favourite chocolate bar is “Green and blacks”.

When we cook or eat sweet treats we try to avoid any refined sugars, so use natural cooking ingredients with natural sugars. We always have various different types of gluten free flours and other unusual stuff in and I recently added coconut flour…. So I wanted to experiment with it and make some muffins for jobe, (paleo and Gluten free) plus add some much needed chocolate! Yum!
We had loads of fun making these muffins and they taste so amazing. The smells from the kitchen were incredible…we couldn’t wait to eat them. We were also excited about using eggs in the ingredients as jobe has had an egg allergy since 7 months old, he still can not tolerate eggs in its “raw” form such as scrambled or quiche etc but after having recent blood tests we now know he can consume small amounts of food that has “cooked” egg in it like cake and biscuits. Yay… Let the paleo cooking commence!
Heres the ingredients list to get you going:

½ cup coconut flour
½ cup tapioca flour
½ cup coconut sugar
½ cup unsweetened cocoa powder
½ teaspoon gluten free baking soda
½ teaspoon gluten free baking powder
3 eggs, whisked
1 cup applesauce
½ cup melted coconut oil
1 teaspoon vanilla extract
½ cup dark chocolate (we used Organic green and blacks) with nuts added
⅔ cup sliced fresh cherries

And here’s what we did…

Chopped the cherries …. And chop the chocolate, Whilst having some taste tests…

Mix together all dry ingredients in a medium bowl: coconut flour, tapioca flour, coconut sugar, cocoa powder, baking soda and baking powder.

In another bowl, whisk together eggs, applesauce, coconut oil and vanilla extract.
Add the dry ingredients to wet ingredients and mix together until well mixed.

Greece the muffin tins and fold in the chopped chocolate and fresh cherries…

scoop the gooey mixture into the muffin tins and bake for about 30 minutes on 150c… But keep checking as oven temperatures vary.

After cooking time, check the muffins are ready by sticking a knife through…if the knife comes out clean you know they are perfect.
Let them cool on a cooling rack and admire with delight…
